Fresh Kale Salad

A few weeks ago I went to see my beautiful friend Alana before she jetted off on her adventure around Australia! Before I left she gave me a beautiful big bunch of freshly grown Kale that she had grown from scratch.

So when I get home I wanted to find a way to use the kale in a dish without taking away from that delicious sweet-bitter taste that I love it!

So I decided a salad was my best bet.

Obviously I used all of my favourite salad ingredients, but it would make no difference if you were to substitute them for your own!

Salad ~

1 Carrot, grated

1 Raw beetroot, grated

2 Cups of kale, lightly chopped into bite size pieces

1/2 Hass avocado

1/2 Cup chopped broccolini


Vinaigrette ~

1 teaspoon crushed garlic

1 Tablespoon red wine vinegar

1 Tablespoon olive oil

1 Tablespoon dijon mustard

1 Teaspoon 100% maple syrup

Juice from half of a lemon

Salt and pepper to taste



Make your salad and arrange on a plate or in a bowl. Place all of the vinaigrette ingredients into a cup or a small bowl and whisk until they are combined, then add the seasoning to your liking. Pour over salad and you have a deliciously quick and easy way to get your daily dose of vitamins!
